Vegetable Cutlets

These vegetable cutlets are crispy on top and moist inside are mainly served as an evening snack with a hot cup of chai served with some ketchup and green chutney, it is a tasty appetiser which is made with easily available vegetables at your home, it's a very healthy and nutritional snack recipe,do give it a try.


Ingredients:

👉2 cups shredded beetroot

👉1 cup shredded carrots

👉1 cup mashed potatoes

👉1 cup peas

👉1/2 cup chopped cauliflower

👉2 medium chopped onions

👉1 medium chopped tomatoes

👉1 tbsp ginger garlic paste

👉1 tsp Garam masala

👉1/2 tsp red chilli powder

👉1/2 tsp turmeric powder

👉1/4 tsp black pepper powder

👉1 tsp cumin powder

👉2 tsp coriander powder

👉1/2 tsp chat masala

👉1 tsp lime juice

👉1 tbsp cornflour(mixed with little water)

👉1 cup bread crumbs

👉4 tbsp oil

👉1 tsp salt


Method:

👉Wash potatoes,beetroots and carrots under running water

take a pressure cooker and cook the potatoes until soft when done let it cool down peel it and mash it and season it with little salt keep it aside.


👉Peel and shred/chop the beetroot and carrots and set it aside ,Wash the cauliflower and cut it into fine florets set it aside.

👉In a wide frying pan heat it up on a medium flame and add in 2 tbsp oil add in chopped onions, when it is translucent add in chopped tomatoes saute for a while then add in ginger garlic paste fry for 1 min.

👉Add in turmeric powder,red chilly powder,cumin powder,coriander powder,black pepper powder stir it for 1 min do not let it burn,now add in shredded beetroot,carrots,cauliflowrers and the peas let it cook under medium flame till the moisture from the vegetables goes away.


👉Now add in chat masala and Garam masala mix it well, add in salt ,last add in lime juice do not cook the vegetables for too long just keep it a bit crunchy put off the gas and let it cool down when cool down take a blender and blend it just once not into a paste. remove it in. a bowl and set it aside.

👉When done add in the mashed potatoes mix it up altogether if required salt as per taste.

heat up a frying pan on medium heat add in 2 tbsp oil now scoop up some ground vegetables mixture make it into balls and roll it into a cutlets shape now dip it into the cornflour water(if 1 tbsp of cornflour then 3 tbsp of water)mixture and roll in breadcrumbs and shallow fry it by adding 2 tbsp oil on medium flame fry it for 5 to 6 mins turning both the sides until crispy and golden brown.

👉Your delicious cutlets are ready to serve, you can have it as a appetizer or as a side dish on the main meal.
