Veg pulao

Veg pulao is one of the basic dish made in any Indian Homes.Its always on the menu in any parties or celebrations. Each region has its own way of making it. I am sharing a simple veg pulao which I often make at home which is super delicious. I have used here Basmati rice you can use any rice of your choice or any other alternative such as brown rice,quinoa,broken wheat or couscous.


Ingredients:

👉2 cups basmati rice

👉1 large sliced onion

👉1 cup diced potatoes

👉1 cup diced carrots

👉1 cup french beans

👉1/2 cup peas

👉4 cardamons

👉10 to 12 black peppercorns

👉5 cloves

👉1 star anise

👉1 inch cinnamon

👉2 bay leaves

👉1 tsp cumin seeds

👉1 tbsp ghee

👉1 tbsp oil

👉4 cups hot water

👉salt to taste

Method:

👉Take a bowl and soak the basmati rice with some water for 1/2 hour.

👉In a pot on a medium flame add in oil and ghee when hot add in cumin seeds,bay leaf,cinnamon,cloves,cardamons,black peppercorns and star anise let it splatter.



👉Add in sliced onions put the flame on high let it turn translucent then add in diced potatoes give it a good stir add some salt.

👉Now add in carrots and french beans all the stirring should be on high flame.

👉Now add in 4 cups of boiled water and some salt give it a stir and cover the lid and let it simmer for 2 mins.


👉Now add in the soaked rice(strained the water)cover it with the lid and let it cook on medium flame for 7 to 8 mins or until the rice absorbs all the water and cook well.

👉Before turning the flame off add in the peas

👉The veg pulao is ready to serve.
