Tomato Egg Bhurji

Tomato Egg Bhurji is a popular Indian dish that is a variation of the classic scrambled eggs. My husband’s special dish he often makes it when he is off from work with eggs,tomatoes and green chillies creating a flavorful, savory dish. Here’s a simple recipe to prepare it:


Ingredients:

👉4 eggs

👉2 large tomatoes, finely chopped

👉2-3 green chilies, chopped

👉Salt to taste

👉Fresh coriander leaves, chopped (for garnish)

👉1 tbsp oil

👉1 tbsp butter


Instructions:

Heat Oil: In a pan, heat oil and butter over medium heat

Add Tomatoes: Add the chopped tomatoes to the pan and cook until they are soft and mushy.

Crack the eggs directly into the pan and stir continuously, scrambling them with the tomatoes and spices

Cook Until Done: Continue to cook and stir until the eggs are fully cooked, soft, and slightly creamy.

Garnish and Serve: Garnish with chopped fresh coriander leaves and serve hot.


Tips:You can add some bell peppers or peas for extra flavor and texture.Serve with naan, roti, or bread.
