Shark fish ambot tik(pilo ambotik)

This shark ambotik would not be tasty if I had not to call up my mother for this lip smacking recipe,I must say she makes the best ambotik,we goans just cannot do without our fish curry rice and ambot tik tops our list,my kids love shark as there are no bones just a cartilage like a spine and the meat is fleshly.Ambot means sour and tik means spicy in Konkani(Goan language).If you like sour and spicy gravies then this is it!

Ingredients:
👉400gms shark (cleaned ,skin removed and cut into slices)
👉2 tbsps oil
👉1 tbsp vinegar
👉2 slited green chillies
👉2 medium onions
👉2 medium tomatoes
👉1/2 tsp sugar
👉handful of Fresh coriander leaves
👉Salt to taste
Grind to paste:
👉1''Ginger
👉 5 to 6 cloves of Garlic
👉 10 peppercorns
👉7 to 8 Cloves
👉1/2 ''Cinnamon
👉1/2 tsp cumin seeds
👉8 Kashmiri chillies
👉Marble size tamrind
👉Water as required
Method:
👉Wash the shark slices( I have used the head and some slices for the ambotik ) and season it with salt.
👉Grind to paste the above mentioned ingredients in a blender and keep aside.
👉Heat up a pot on a medium flame add in oil when hot add in finely chopped onions sauté until translucent then add in chopped tomatoes
👉When slightly mushy add in the ground masala paste saute for 5 mins on low heat
now add in 2 cups of hot water or as required,add in salt to taste and cover the pot with the lid and let it simmer for 5 mins.
👉when the the gravy slightly thicker add in the shark slices keep the flame low and give it a good mix ,cover the pot and let it simmer for 10 mins after 10mins add in sugar,vinegar,slited green chillies and fresh coriander leaves and turn off the heat serve hot with steamed rice...
THE AMBOTIK TASTES BETTER THE NEXT DAY THE FLAVOUR MELD AND THE GRAVY TASTES BETTER WHEN YOU KEEP IT LONGER.
