Rose cookies(Rose de Coque)

I have some pleasant memories of rose cookies as a child where my Aunt used to make for every Christmas the delicious Rose cookies.

Myself and my cousins used to enjoy these rose cookies. It is very famous during the Christmas season in Goa.

Rose cookies are sweet,crispy, deep fried snack which is made with all purpose flour, rice flour, coconut milk, eggs, milk and sugar.




Ingredients:

👉1 cup all purpose flour

👉1/2 cup rice flour

👉1/2 cup milk

👉1 cup coconut milk

👉1 tsp vanilla extract

👉2 eggs

👉1/2 cup powdered sugar

👉Oil for deep frying


Method:

👉Apply some oil and keep for rose cookie mould if it is a new one atleast for a day.

👉In a bowl add eggs, vanilla extract,sugar and beat it well.

👉Now add the milk whisked it all together.



👉Now add the rice flour, fold everything together

👉Now add the coconut milk, mix it all well.

👉Now add the flour little by little,mix everything well combined to form a smooth batter like a pan cake batter, keep the batter aside for half an hour.if the batter becomes thin than you can add flour to it or if it becomes thick you can add little milk to it.



👉Heat up a deep frying pan on a low to medium heat add in 1/2 litre of oil when the oil turns hot insert the rose cokkie mould, than carefully dip only half way into the batter and insert the mould into the hot oil very gently,you will see the oil bubbling.



👉After few seconds, shake the mould handle gently to release the batter into the oil.

👉It leaves the mould on its own or if it gets stucked you can use a fork to remove it.

👉Fry till golden brown flipping both the sides.



👉 Drain it on the kitchen towel for the excess oil.

👉Leave the mould in the hot oil for the next one to be ready to dipped into batter.


👉Your Rose cookie is ready.when cool down store it into a airtight container.
