Root Vegetable Curry

Spice up your life by making this delicious root vegetable curry which is made with swede, carrots,parsnips and potatoes to make it more tastier I added prawns and red kidney beans which makes the curry so warming and hearty. Do try to make this delicious Indian spiced root vegetable curry.



Ingredients:

👉1 Swede

👉4 carrots

👉1 parsnips

👉1 big potato

👉1 cup mushrooms

👉10 king prawns

👉1tin red kidney beans

👉1/2 tin chopped tomatoes

👉1 tsp Kashmiri chilly powder

👉1 tsp garam masala

👉1 tsp turmeric powder

👉 few fresh coriander leaves

👉salt to taste


Roast together:

👉2 tbsp coriander seeds

👉1 tsp fennel seeds

👉1 tsp cumin seeds

👉2 cardamon

👉1 black cardamon

👉star anise(half)

👉1/2 tsp black pepper corns

👉1/4 tsp fenugreek seeds

👉8 cloves

👉1"cinnamon

👉1/4 nutmeg

👉6 red chillies

👉1 cup coconut (desiccated/fresh)

👉3 cloves of garlic

👉1"ginger

👉2 chopped onion


Method:

👉Take a frying pan and dry roast the spices as shown above in the roast together column when roasted well, remove it in a plate to cool when it is cool blend to a paste with little water keep it aside.




👉Wash, peel and season the prawns keep it aside.


👉Wash the root vegetables peel it diced it into medium sizes, keep it aside.



👉Heat up a pot add 3 tbsp oil when the oil is hot add in the seasoned prawns fry it 2 mins when slightly pinkish add in 1/2 tin chopped tomatoes fry it for 2 mins now add in ground spices paste mix in altogether add in 1cup of water add in salt to taste, cover it with a lid let it boil.


👉when the curry starts boiling add in the diced root vegetables give it a good boil for 5 to 6 mins add in mushrooms stir it up, now add in the 1tin of red kidney beans, give it good stir,

if the gravy is too thick than add in some more water garnish it with fresh coriander leaves.

Enjoy the delicious curry.
