Prawns fried in recheado masala

“Crispy, spicy, and bursting with Goan flavors — Rava Fried Prawns coated in rich Recheado Masala. A bite of sunshine on a plate!”

Ingredients:
For Prawns:
•1/2 kg medium-sized prawns, cleaned and deveined
•Salt to taste
•1/2 tsp turmeric powder
•1 tsp lemon juice
For Recheado Masala
•6-8 Kashmiri red chilies (soaked in warm water)
•6 garlic cloves
•1-inch ginger
•1 tsp cumin seeds
•1 tsp black peppercorns
•1/2 tsp cloves
•1 small cinnamon stick
• 2 tbsp vinegar
•1 tsp sugar
•1/2 tsp turmeric
•Salt to taste
For Coating & Frying:
•1/2 cup rava (semolina)
•2-3 tbsp rice flour
•Oil for shallow frying
Method:
1.Prepare the prawns: Marinate prawns with salt, turmeric, and lemon juice. Set aside for 10 minutes.
2.Make recheado masala:
•Grind all masala ingredients into a smooth thick paste, adding a little vinegar or water if needed.
•Taste and adjust salt/vinegar if required.
3.Marinate:
•Mix the prawns with the recheado masala.
•Let it marinate for at least 30 minutes (longer = better flavor).
4.Coat:
•Mix rava and rice flour together.
•Dredge each prawn nicely in the rava mixture, pressing lightly to coat well.
5.Fry:
•Heat oil in a pan.
•Shallow fry the prawns on medium heat until golden brown and crispy on both sides (about 2-3 minutes per side depending on size).
