Mix vegetables and oats cutlets


A healthy goodness of mix vegetables and oats with mild spices.oats are not limited to only porridge but there are lots of ways where oats can be added to make a meal healthy.

Here I have used oats in vegetables to make these delicious cutlets,you can make these cutlets of vegetables of your choice or any vegetables available at your kitchen.These cutlets are perfect for lunch or dinner or even as a snack,you can eat them on its own or with salad at the side with some dipping sauce.




Ingredients:

👉2 cups mix vegetables

👉1 cup cabbage

👉2 cups spinach

👉1 cup oats

👉1 chopped onions

👉 1 finely chopped tomatoes

👉1/2 tsp thyme

👉1/2 black pepper powder

👉Few strands finely chopped coriander leaves

👉3 cloves of garlic finely chopped

👉1 finely chopped green chilly

👉1/2 tsp red chilli flakes

👉1 egg

👉1 slice of a bread

👉2 tbsp olive oil

👉salt to taste

Method:

👉Heat up a pan on a medium heat add in 2 tbsp oil add in chopped onion sauté for a while

add in tomatoes, minced garlic sauté for 30 seconds.


👉Now add in all vegetables( you can use any vegetables you have at home)mix in all together let it cook for 5 mins on medium heat..


👉At this stage add in the thyme, black pepper powder, fresh coriander leaves, red chilli flakes ,salt to taste.


👉 Now add in the oats combined everything together cook it for a while.switch off the gas remove it in a plate and let it cool down when completely cool down put it in blender coarsely grind not a complete paste.Remove it in a bowl now add in crushed bread,add 1 whisked egg... mix it properly now take a cookie cutter and place it on the board and put the mixture in it and form it into a shape.


👉Heat up a frying pan on a medium heat add in 2 tbsp oil shallow fry the cutlets fliping gently both the sides.


👉Serve it over as snack or side dish.
