Lime pickle

I am so happy that this recipe is from my Husband,there were times when I used to get lime pickle from the store which was quiet sweet and oily,This recipe of pickle is oil free and instead of sugar it is substituted with palm jaggery, believe me the taste is so much better.



Ingredients:

👉15 lime

👉1tbsp pink salt

👉1tsp turmeric powder

👉2 tbsp red chilly powder

👉1''ginger finely chopped

👉10 garlic cloves finely chopped

👉6 small palm jaggery

👉50ml vinegar

👉250ml water


Method:

👉Wash the lime with running water drain it ,and wipe it dry and keep it aside.

Scrape the lime with a scraper(optional)to reduce the bitterness.




👉 Cut each lime into quarters remove the seeds, add the salt, turmeric,chilly powder mix it well and leave it for 3 to 4 hrs.



👉In a pot add in the the above lime mixture,ginger,garlic,water,vinegar and the jaggery heat it up on a medium flame, bring it to a boil ,let it simmer for 10mins or until the lime is soft and tender and it thickens up a bit.Turn off the gas and let it cool down.


👉Store it in airtight container.let it sit at least for 2 to 3 weeks until ready to eat.


👉It tastes delicious with canji/pez or even on a plain pulao
