kolhapuri chicken

kolhapuri cuisine is very popular for its tasty and spicy foods,Its a popular dish of maharastra and is very popular in many restaurants .This dish is prepared by roasting fresh spices and coconut which gives it a unique flavour to the chicken.you can also add cream or cashewnut paste to make it creamier. This dish can be enjoyed with rice, chappties or parathas.

A must try recipe.




Ingredients:

750 gms chicken

1 1/2 tbsp ginger garlic paste

1 large finely chopped onion

1 cup tin tomatoes

1 tbsp red chilli powder

1/2 tsp grated nutmeg

3 tbsp oil

salt to taste


Dry roast:

1 cup shredded/ dry/desicated coconut

1 tsp cumin seeds

4 whole cardamon

20 black pepper corns

4 cloves

1 tsp poppy seeds

1" cinnamon


Method:

👉Heat up a pan dry roast the above ingredients shown in dry roast on a low flame.

do not over roast as it might taste bitter, when cool down grind it to a fine paste with little water keep it aside.



👉Wash the chicken season it with salt, red chilli powder, and the above ground paste keep it to marinate for 1/2 hour.



👉Heat up a pot add in oil to that add onions sauté till translucent, add in ginger garlic paste sauté for a while now add in tomatoes sauté it until nice and pulpy.


👉Now add in the marinated chicken cook it on a high flame for 5 mins without adding any water let the chicken get coated the onions and tomato mixture.



👉Now add two cups of water to it, add in freshly grated nutmeg, salt to taste.

cover it and let it cook for 15mins on low flame.


👉Your kolhapuri chicken is ready to be eaten with steam rice, chapatis or parathas


👉Garnish it dry kasuri methi or fresh coriander leaves.
