Kanda Poha

Poha is a popular maharashtrian(western Indian)breakfast made from flattened/beaten rice. It is simple and healthy meal which can be done quick.Kanda means onions in Marathi language.The maharashtrian word for flattened rice is poha hence the term kanda poha.

It is considered a good meal for diabetics as it is easily digestible and low in calories.



Ingredients

👉200 gms poha(flattened/beaten rice)

👉1 large onion sliced

👉1 boiled potato( cut into small cubes)

👉3 green chillies (slited)

👉2 tbsp peanuts

👉6 to 7 curry leaves

👉1/2 tsp mustard seeds

👉1/4 tsp turmeric powder

👉1/2 tsp cumin seeds

👉1 tsp salt

👉1/4 tsp sugar

👉1 tsp lime juice

👉2 tbsp oil

👉Few fresh coriander leaves


Method

👉Wash the poha under the running water in the strainer,drain the water and put the poha in a bowl, season it with salt and sugar keep it aside.

👉Heat up a frying pan on a medium heat dry roast the peanuts slightly brown and crunchy, when done remove it in a plate keep it aside.


👉Take a pot on a medium heat add 2 tbsp oil than add in cumin seeds,mustard seeds and curry leaves let it splatter.give it a stir.



👉At this stage add sliced/chopped onions sauté for a while not to make it too brown now add in the roasted peanuts give it a stir, then add the turmeric powder and slited green Chillies sauté for a while.Now add the boiled and diced potatoes.combine everything together.add salt to taste.


👉Add in the seasoned poha and mix until everything is well combined...cover it with a lid and simmer for 5 minutes.



👉Add fresh coriander,add lime juice..mix in gently...and than its ready to eat

Enjoy kanda poha for morning breakfast or evening tea.
