Green chicken biryani

The green chicken biryani is full of Aroma and flavour,do try this mouthwatering recipe where the flavours come from the greens which is fresh mint leaves and fresh coriander leaves.


Ingredients:

👉 500 grams boneless chicken(washed,cut into medium pieces)

👉2 cups basmati rice(soaked for half hour in water for stronger grains)

👉1 large onions finely chopped

👉2 medium tomatoes finely chopped


Par boiling spices

👉5 to 6 Peppercorns

👉1 “Cinnamon stick

👉4 Cardamon pods

Rice boiling

👉Boil enough water to cook the rice(2 cups of rice then 8 cups of water) excess water as we need to drain it out.


👉Add all the above par boiling spices mentioned above to the rice.


👉Cook the rice with 1/2 tbsp of salt for 7 to 8 mins until the rice is cooked 70 percent done ..making sure not to over cook the rice.


👉Drain excess water in the colander or sieve and keep it aside.


Coloured rice

👉On a medium flame heat up a pan add 1 tbsp ghee add a pinch of green food colouring liquid to that add 1 cup of cooked basmati rice(remove from the rice cooked above)...nicely fry the rice coating all the green food colour to the rice...keep it aside


Crispy onions

👉1 large onions thinly sliced

👉1/2 cup of oil for frying

👉Fry the onions golden brown until crispy..keep it aside. Keep the oil as we need it for the main dish.


For garnish

👉Few finely chopped coriander leaves

👉1 tbsp rose water


Ingredients For marination of chicken

👉1/2 cup yogurt

👉1 tbsp of biryani masala

👉1/2 tsp of turmeric powder

👉1 tsp of Garam masala

👉1 tbsp salt

Grind together to a paste

👉5 cloves of garlic

👉1/2 "Ginger

👉1/2 bunch coriander leaves

👉1/2 bunch of mint leaves

👉3 green chillies

👉3 tbsp of tamarind pulp


METHOD:

👉After the above paste is ground apply it to the chicken,add some salt to taste and marinate it for few hours.

👉In a pot add 1 tbsp ghee and fry the marinated chicken on high flame atleast for 5 mins and all the masala should be coated to the chicken pieces.

When done keep it aside.

👉On a medium heat ...take a pot add in 2 tbsp tbsp oil (just use the fried onion oil as it will give more flavour to the gravy)to that add in chopped onion and fry until translucent then add chopped tomatoes fry until mushy. Add some salt to it,1 tbsp coriander powder,1/4 tsp cumin powder,1/2 tbsp biryani masala then add the cooked chicken it,cook it more for 2 mins coz it should combine with the onion and tomato gravy.

 👉Add some water if needed then add some chopped coriander leaves before turning off the flame if you want it spicy slit some green chillies (optional). and now your gravy is ready.

Layering of the biryani

👉Take a big pot add the cooked gravy one big spoon than the cooked rice,Sprinkle chopped coriander leaves,Then add crispy fried onions

👉To this add the coloured layer of rice

👉Add 1 tsp of rose water, repeat the layers again.

Cover the pot with a aluminium foil tightly and close the lid.

👉Heat up a tava/flat frying pan put the biryani pot on the tava

👉let it simmer for 10mins on slow fire until steam builds up when done put it off and Let it cool for 5 min mix gently the chicken and rice and serve.

👉Serve this delicious green chicken biryani with raita of your choice.
