Goan Pork Aad maas

Pork Aad maas is a Goan recipe of pork on bone. It is sweet tangy and mild spiced.

This recipe brings up to me the good old memories where we used to butcher the pig at home...my grandmother used to do this on feasts and special occasions....nothing used to go waste everything was used, stored n preserved for later use....

Aad maas was always on the list and used to taste delicious on rice or pulao or with pao


Ingredients:

800gms Aad mass(pork meat on bones)

10 to 12 Kashmiri chillies

6 cloves of garlic

1/2''ginger

1 tsp cumin seeds

1''cinnamon stick

1/2 tsp turmeric powder

12 cloves

1/2 tsp black pepper corns

1 small ball of tamrind

2 medium sliced onion

1/4 cup vinegar

2 tbsp oil

1 tsp salt

1 tsp sugar


method:

*Wash the pork and apply salt keep aside.



*In a blender grind to paste cloves, ginger,garlic,cinnamon,turmeric,cumin,tamarind, blackpepper corns and kashmiri chillies with some water..remove it in a bowl keep aside

*Heat up a pot on a medium heat add some oil to that add the pork, add vinegar and salt cover and cook for 5 mins.

*Add sliced onions and add the masala paste add a cup of water. bring it to a boil add some sugar.cover and cook it on slow heat till gravy thickens and the meat is cooked tender.



*And the yummy Pork Aad mass is ready to eat tastes delicious with pao.
