Goan mutton xacuti

Mutton xacuti A classic rich blend of local spices and fresh coconut

INGREDIENTS:

👉1kg mutton on bones

👉5tbsp coconut oil

👉2 cups Fresh coconut

👉12 cloves of Garlic

👉1 inch of ginger

👉4 medium Onions

👉2 medium tomato

👉Fresh coriander leaves

👉1 big lime

👉1/4 cup of tamarind pulp


DRY ROAST

👉5 Kashmir chillies

👉5 local dry red chillies

👉4 tbsp Coriander seeds

👉1 tsp Fennel seeds

👉1 tsp Cumin seeds

👉1 tsp black peppercorns

👉10 cloves

👉1 1/2 inch cinnamon

👉3 tsp Poppy seeds

👉1 1/2 Star anise

👉4 Green cardamon


Method

👉Wash the mutton squeeze a lime in it, add 1 tsp salt to it and 1 tbsp of ginger garlic paste it marinate for 1/2 hour and set it aside.

👉Take a pressure cooker and add the marinated mutton to it with a 1 cup of kettle water and pressure cook it for 15mins or for 3 to 4 whistles.

👉Dry roast the above ingredients on a medium fire till you get a nice aroma of the spices, when done, remove it in a plate and let it cool down.

cool for some time.

👉Grind the dry ingredients using the blender add a little water. grind it into fine paste.remove it in a bowl set it aside.

👉Heat up a pot add 2 tbsp coconut oil and fry 1 sliced Onion, 12 garlic cloves and chopped ginger fry until it changes its colour. Then add the grated coconut fry it till it turns golden brown, when done remove it in a plate and let it cool down.

Grind the above ingredients using blender with a Little not to a fine paste but a little thicker. When done set it aside

👉Heat up a pot add 3tbsp coconut oil, add the 3 chopped onions fry until translucent than add the chopped tomatoes and the ground masala to it.

👉Now add the pressure cooked mutton to it and put the flame on high cover it let all the spices infuse the meat cook it for 3 to 4 minutes

👉Lower the heat, add the coconut paste and mix it all up, add water to it if it too thick then add the tamarind pulp and close the lid and let it cook in the flavourful spices for 15 mins. Check for salt

👉Last add the freshly chopped coriander leaves and it's ready to eat.

👉you can also add diced potatoes if you like

👉Enjoy it with rice,pulao,bread,rotis.
