Goan mangane

Mangane is one of the most popular sweet dish of Goa. My personal favourite sabudana kheer/Porridge with chana dal cooked in with coconut milk. It is simple,easy to make and delicious dessert usually made during festive occasions.



Ingredients:

👉1 cup chana dal

👉1 cup sabudana(sago pearls)

👉1/2 cup sugarcane jaggery

👉1 1/2 cup coconut milk

👉1 tsp cardamon powder

👉3 tbsp cashew nuts


Method

👉Wash and soak the chana dal overnight with minimum water,

next day drain the water.


👉Wash and soak the sago for 1hour then drain the water.keep it aside.



👉Heat up a pot add the chana dal to it, add some salt, add 1 1/2 cup of water and boil it, don't let it too soft.you can use a pressure cooker aswell to cook the dal.

👉Now add the soaked, drained sago, sago will add some thickness to the dessert, add the jaggery to it mix it up well.you can add jaggery according to your taste as how much sweet you need.cook the sabudana till it becomes transparent.



👉Now add the cashew nuts to it.you can add any dry nuts or dry fruits which you like,now give it good mix.



👉When the gravy turns thick and creamy,add the coconut milk to it.boil it on low flame.


👉sago cooks very quickly so don't boil it for too long.last add the cardamon powder to it.give it a stir and the kheer is done.

👉You can serve it warm or chilled.
