Coin biscuit/egg drop biscuit or Wine biscuit

When your daughter ask you which is your favourite biscuit and you say you like coin biscuit, but she doesn’t know what is coin biscuit ..so I thought of satisfying my childhood cravings.

My mom always carried a packet of freshly baked coin biscuits in her handbag on her way back home from work from our local baker...loved the taste which melts in the mouth... sweet childhood memories.


INGREDIENTS

  • 1 cup all purpose flour

  • 2 eggs

  • 6 tbsp sugar

  • 2 tbsp melted butter

  • 1 tsp vanilla essence

  • 1/2 tsp baking powder

  • 1/4 tsp Yellow food colour


METHOD:

1. Take a bowl, add the two eggs and whisk it well .

2. Add in vanilla essence

3. Add in sugar and keep on whisking.

4. Then add in melted butter, and the food color

5. In a separate bowl seive all purpose flour, add in baking powder. Now add the flour little by little to the egg mixture. Combine everything together

6.Take a baking tray put parchment paper on it and grease it with little butter.

7.Preheat the oven on 150 degrees

8. Fill the batter in the piping bag.Add two drops of the batter drop by drop. leaving some space in between each drop.




9.Bake it for 10 mins and let it cool down completely than remove it from parchment paper.

and it's ready to eat. Yum yum .

10. You can store these biscuits in an airtight container but at our place it is finished the next day...
