Coconut and raspberry loaf cake

A delicious cake for all the coconut lovers with the juicy raspberry make a lovely combo

A old fashioned loaf cake which is a simple and easy to make recipe.



INGREDIENTS:

  • 1 1/2 cup self raising flour

  • 3 eggs

  • 1 cup coconut

  • 1/2 cup fresh raspberry

  • 3/4 cup sugar

  • 150 gms butter



METHOD:

  • In a bowl cream together butter and sugar until nice n creamy

  • Add in the eggs, beat it up well, gradually

  • Fold in sieved flour little by little and combine together  

  • Add in coconut, mix up altogether

  • Add in the juicy raspberry, mix it gently

  • Preheat the oven for 10 mins on 180 deg

  • Grease up a loaf tin

  • Pour in the mixture in the greased tin

  • Bake it for 30 mins.Insert a toothpick to see if the cake is done, if it comes clean than its done,when its done demould it let it cool down for 15mins and then cut into desired sizes


Your coconut n raspberry cake is ready to eat. Serve with a nice cup of hot tea.
