Chicken pulao

A one pot flavoured chicken pulao cooked with mild Indian spices.A super quick recipe which is not only tasty but very easy to make.I have added cauliflower and capsicum along with chicken to give it a flavourful taste,you can add any vegetables or omit the vegetables according to your taste.


Ingredients:

👉500 gms chicken on bones 👉3 cups basmati rice(soak 1/2 hour) 👉6 cups hot water 👉1/2 tsp cumin seeds 👉2 bay leaves 👉4 Cloves 👉1”cinnamon 👉1 tbsp coriander powder 👉1/2 tsp Garam masala 👉1/2 tsp turmeric powder 👉2 medium sliced onion 👉1 medium sliced tomatoes 👉1/2 cup florets of cauliflower(optional) 👉1/2 cup diced/sliced capsicum(optional) 👉4 tbsp olive oil


Grind to paste 👉3 green chillies 👉1/2 cup fresh coriander leaves 👉1''Ginger 👉6 cloves of garlic

Marination of chicken 1/2 hour 👉Washed and cut chicken on bones 👉1 tbsp ginger garlic paste 👉1/2tsp salt 👉1 tbsp lime juice


Method

👉Heat up a pot on a medium heat add in olive oil when the oil is hot add in cumin seeds cinnamon,bay leaves,Cloves...let it splatter...


👉On a medium heat add in sliced onions fry until light brown,add in sliced tomatoes sauté for 5 mins,add in salt to taste.



👉Add the marinated chicken fry the chicken for 3 to 4 mins on a high heat...


👉Add in the ground paste to it coat it nicely with the chicken.

👉Add in 1 tbsp coriander powder,1/2 tsp of Garam masala powder 1/2 tsp of turmeric

powder,Sauté for about 3 mins...add little water if required..now add your choice of vegetables to it..I have added cauliflower and capsicum this is optional if you don’t want to add vegetables don’t use it..as I like I have added.

👉Add in 6 cups of boiling hot water to the pot of chicken with veges and add 1 tsp salt...

Add in soaked rice...give it a good boil and then stir in gently,Cover the pot let it cook for 15mins or until the rice is done.

👉Your delicious chicken pulao is ready to eat
