Chicken Lababdar

The Mughlai chicken gravy with aromatic spices and tender chicken pieces is great to enjoy with steamed basmati rice or paratha,roti or Naan.


Ingredients


700 gms chicken(washed,cut into medium pieces)

2 medium onions( chopped)

3 medium tomatoes(grind it into fine paste)

2 black cardamon

4 green cardamon

1”cinnamon

1 whole mace

1 tbsp ginger garlic paste

1/2 tsp turmeric powder

1 tbsp Kashmiri chilly powder

1/2 tbsp coriander powder

1/2 tsp cumin powder

3 tbsp cashew nut paste

1 tsp Garam masala

1/2 tsp kasuri methi

2 tbsp butter

2 green chillies finely chopped

Salt to taste


Method


*Wash the chicken seasoned with salt than add in 1tbsp ginger garlic paste to the chicken keep aside.marinate for 15mins.


*Heat up a pot on a medium heat pour in oil when the oil is hot add in black and green cardamon, mace and cinnamon fry it for few seconds till you get a nice aroma of the spice.


*Add in chopped onions fry it till golden brown

*Add in 1 tbsp ginger garlic paste fry for few seconds till the raw smell of the ginger garlic goes away.

*Add in turmeric powder,Kashmiri chilly powder, cumin powder, coriander powder ,fry it for few seconds add in tomato paste Sauté for 5 to 7 mins.


*Add in the chicken pieces ,coat the pieces with the gravy mix everything together On a high flame cook the chicken for 5 mins so that the chicken absorbs the gravy add in chopped green chillies...add in salt...add in little water if the gravy is thick.


*Lower the flame and Cover the pot and cook it for 15 mins.

*Open the cover of the pot and remove the chicken pieces in a plate...keep it aside

*let the gravy cool down.

*When cool...transfer the gravy in a blender...and Grind the gravy into a paste.remove the masala paste from the blender and keep aside.


*Take another pot, on a high flame add in 1 tbsp oil add the ground paste add in 1/2 tsp Garam masala powder add in 1 tbsp Kashmiri chilly powder ,add the cashew nut paste ,add in kasuri methi and mix it very well ...now add the chicken cover it n cook for 3 to 4 min....


*Serve hot with a garnish of kasuri methi.

*Your Mouthwatering chicken lababdar is ready to eat.
