Chicken do pyaza is a chicken curry in masala onion sauce which is aromatic and wonderfully fragrant. ''Do pyaza'' means double onions the onions are used in two different ways and the chicken is cooked in onions and tomato gravy with spices which goes perfect with tandoori roti or rice.
Ingredients:
👉1 kg chicken (washed cut into medium pieces)
👉2 medium onions finely chopped
👉2 medium onions diced
👉2 medium blended tomatoes
👉1 tomato diced
👉2 green chillies slited
👉Fresh coriander for garnishing
Marination for chicken
👉1 kg chicken cut into medium pieces
👉1 tsp paprika
👉1 tsp red chilli powder
👉1/2 tsp turmeric powder
👉1 tbsp ginger garlic paste
👉1 tsp salt
👉Marinate the chicken with these spices for 1/2 hour
Yogurt paste:
👉4 tbsp yogurt
👉1 tbsp cumin powder
👉1 tsp red chilly powder
👉2 tbsp coriander powder
Method:
👉Heat up a heavy bottom pan on a medium flame add 4 tbsp oil when its hot add in chopped onions Sauté till the onions turn golden brown.
👉Now add in the puréed tomatoes to that add in 1 tbsp ginger garlic paste Sauté till the raw smell goes and the oil separates.from the pot now add in the yogurt paste and salt sauté for a while.
👉Now add in the marinated chicken mix and coat the chicken with the masala mixture on high heat for 5 mins now add in 1cup of water, cover the lid and Cook for 15 min on low fire
then add in 1 tsp Garam masala to it ,1 diced onion and 2 green chillies and Cook it for 5 mins last add the 1 diced tomatoes and 1/2 tsp kauri methi and cook for 2 mins.
👉Garnish with fresh coriander leaves and your chicken do pyaza is ready to serve.
