Chicken Chow Mein

Chow mein is a traditional Chinese dish made with egg noddles and stir fry vegetables and by adding some proteins to it may be chicken or different meat.The noddles are prepared in light oil with lots of vegetables and lean meat is a greater option.



Ingredients :

👉1 1/2 pckt of egg noodles

👉2 tbsp oil

👉1 tbsp of finely chopped garlic

👉1/2 tbsp of finely chopped ginger

👉1 finely chopped green chilly

👉1 cup finely sliced carrots

👉1 cup sliced capsicum

👉1 cup diced onion

👉1 cup sliced mushrooms

👉1 cup boneless chicken

👉 1/2 tsp black pepper powder

👉1 tbsp soya sauce

👉1 tsp oyster sauce

👉1 tbsp white vinegar

👉1/2 tsp red chilly sauce


Method:

👉In a pot add 6 cups of water bring it to boil add in egg noodles add 1/2 tsp salt and few drops of oil. Boil it for 5 mins or till done.strain it under the strainer keep it aside ,do not add cold water.


👉In a wok heat up 2 tbsp oil on a high heat add in chopped ginger garlic and green chillies. saute it till a nice aroma of the ginger garlic chillies comes out.


👉 Now add the chicken, you can use any boneless chicken I have used the roast chicken and its slices as I had that..saute on high heat.



👉Now add in diced onions and the vegetables sauté for a while on a high heat than.if you slow down the heat the vegetables will be soggy, I like it on high heat because it makes the vegetables crunchy.Now add in black pepper give it a mix.



👉Now add the boiled noddles to the veggies mix it altogether for a while now add some salt to taste, soya sauce,oyster sauce, red chilly sauce, white vinegar,give it good mix and fry the noddles for a while with that yummy sauce until caramelised and crispy and your chow mein is ready to eat.
