Chicken Caldine

Chicken caldine is deliciously creamy and aromatic curry,It is a mildly spiced preparation, made with few spices and freshly extracted coconut milk.

 I mostly like it with steamed rice. Do give it a try to this creamy curry recipe.

Ingredients:

👉1 kg Chicken on bones

👉1 coconut(ground and strained the milk) thick milk and thin milk(grind after straining the thick milk)

👉2 tbsp Oil

👉1 chopped Onion

👉1 chopped Tomato

👉1 Maggi Cube

👉1 tbsp Tamarind Pulp


Grind to paste:

👉½ cup Coriander Leaves

👉4 Green Chillies

👉1 inch Ginger (chopped)

👉8 Garlic Cloves (peeled)

👉1-inch Cinnamon Stick

👉1/2 tsp turmeric powder

👉5 Cloves

👉½ tsp Cumin Seeds

👉10 Black Peppercorns

👉1 tbsp Tamarind(soaked in hot water)


👉Wash the chicken and apply salt and keep it aside.


👉Grind  the above ingredients which says Grind to paste and keep it aside.

Heat up a pot add in oil, chopped onion and tomatoes sauté for 2 mins when translucent add in the ground paste.

👉Sauté it for 3 mins then add the chicken pieces to it coat every bit of the chicken with the paste on a high heat for 2 mins.


👉Now put the flame on medium and add the thin extracted coconut milk ,add tamarind pulp,Maggie cube and salt to taste and cover it and let it simmer for 5 mins and let the mixture combine in the flavours of the aromatic curry.


👉last add the thick coconut milk,keep stirring gently,keep the flame on simmer and let it cook for 10mins and it’s ready to serve,Try this delicious recipe and enjoy it with steamed rice.
