Cauliflower 65/Gobi 65

This is a very popular South Indian dish gobi 65.Gobi is a Indian term for cauliflower,

The cauliflower florets are blanched and marinated in spices and then deep fried in a batter.This South Indian snack tastes so good and is served as a starter or as a side dish in any Indian meal in restaurants.65 recipes are very popular in south India Gobi 65 recipe is a vegetarian version of chicken 65 it is best served hot as when it cools down it tends to loose it’s crispiness.


Ingredients:

👉Cauliflower(300 gms)

👉1 tsp black pepper powder

👉1 tsp Garam masala

👉1 tbsp hot and chilly sauce

👉1 1/2 tbsp ginger garlic paste

👉1 tbsp coriander leaves(chopped fine)

👉6 curry leaves(chopped fine)

👉1 tsp Kashmiri chilli powder

👉1 tsp lime juice

👉4 tbsps plain flour

👉1 tbsp rice flour

👉2 tbsp cornflour

👉1/2 tsp baking soda

👉1/2 ltr oil for dip frying

👉1 tsp salt


Method:

👉Cut the cauliflower into florets not too big and not too small,wash them and keep aside.


👉Take a pot on medium heat add the washed florets to the pot add in some water just above the florets and blanch them with 1/4 tsp salt for 2 mins.when done drain all the water and keep it aside.


👉Take a bowl add in Kashmiri chilli powder,ginger garlic paste,black pepper powder,Garam masala,finely chopped curry Leaves and coriander leaves,red chilly sauce,1/4 tsp salt,lime juice and 1/2 cup water mix it all up to form a watery mixture,now soak the blanched cauliflower florets in the spice mixed water for 10 mins.



👉After that remove the cauliflower florets from the spice water,place it into a plate and keep it aside.


👉In the same spice water add in 2 tbsp of cornflour,1 tbsp of rice flour,4 tbsp of plain flour add in 1/2 tsp baking soda,1/2 tsp salt mix it up well to form a thick batter and then add in the florets,cover all the florets with the batter.


👉On a medium heat in a wok/kadai add in 1/2 ltr oil when the oil is hot coat eat florets in the batter and dip fry the florets until golden crisp,do not fry too many florets together fry it into batches of 4, as too many in the oil the oil will get cold and won’t fry properl,after the florets are fried remove it on plate with a paper towel placed on it so that extra oil soaks the oil.


👉Last in the hot oil add in few curry leaves and green chillies set this aside for garnishing

remove the fried florets from the paper towel and plate it garnish it fried curry leaves and green chillies,when done serve it hot as snack/appetiser or a side dish.
