Beef Biryani

Biryani was originated in Iran (Persia) and it was brought to South Asia by Iranian travelers and merchants. It’s a dish of kings. In this recipe beef is cooked with the whole spices and yogurt and then the rice is layered and given a dum/steam.Dum method is used in this preparation as it infuses the correct flavours in the rice and meat.



Ingredients:

👉1/2 kg beef (washed,cut into 2 inch chunks pieces)

👉3 cups basmati rice(soaked for half hour in water for stronger grains)

👉2 chopped onions

👉2 chopped tomatoes


Cooking Rice:

👉Boil enough water to cook the rice(3 cups of rice den 10 cups of water) excess water as we need to drain it out Cook the rice with 1 tbsp of salt for 7 to 8 mins until the rice is par boiled...making sure not to over cook the rice Cook the rice just half done as we need to steam it last with the beef.Drain excess water...keep it aside.


Coloured rice:

👉On a medium flame heat up a pan, add 2tbsp of fried onion oil and add a pinch of food colouring powder to that add 2 cups of cooked basmati rice(remove from the rice cooked above).. fry the rice coating all the food colour to the rice...keep aside


Crispy onions:

👉2 large onion thinly sliced

👉1 cup of oil for frying

Heat up a pan add oil and fry the sliced onions golden brown until crispy.when done keep it aside.


Ingredients For marination of beef

👉1 tsp salt

👉2 tbsp lime juice

👉2 tbsp ginger garlic paste

👉1/2 tsp turmeric powder

Wash the meat chunks ands marinate out with the above ingredients which says marinate set it aside for an hour

yogurt mix

👉1 cup yogurt

👉1 tbsp of biryani masala

👉1 tbsp of coriander powder

👉1/2 tsp of turmeric powder

👉1 tsp of red chilly powder

👉1 tsp of Garam masala

Take a bowl add in yogurt and mix all the above ingredients which says yogurt mix. set it aside.


For garnish:

👉Few coriander leaves

👉1 tbsp ghee

👉2 tbsp rose water

whole spices:

👉4 green cardamon

👉1 star anise

👉1 black cardamon

👉1 stick cinnamon

👉20 black peppier corns

👉8 cloves


Method for the beef gravy:

👉On a medium fire,Heat up pot add in 3 tbsp fried onion oil when the oil is hot add the ingredients win h says whole spices let it splatter and leave a nice aroma then add 2 chopped onions fry until translucent then add in the marinated beef fry it on high heat first for 5 mins and then pressure cook for 10 mins when done add in 2 chopped tomatoes to the onion gravy give it a mix.


👉Then add the yogurt mix and add in 1 cup water combine it with the beef add in salt 4 green chillies and coriander leaves cover it and let it cook for more 7 mins when done then start layering up rice.


Layering of the rice:

👉In a big pot at the bottom add a layer of a cooked rice on the top of oil add the beef cooked beef gravy.Den add crispy fried onions sprinkle a few coriander leaves.To this add the coloured layer of rice Add 1 tsp of rose water and 1 tbsp oil ghee . Repeat the process again and Cover the pot with a aluminium foil tightly ,heat up a tava put the biryani pot on the tava/flat frying pan

👉let it simmer for 15 min until steam builds up when done serve hot.
