Aloo palak/ Potatoes with Spinach

Aloo palak is a simple Indian dish made with potatoes, spinach, and spices. It is a super easy and delicious way to get a little extra iron in your Diet. I kept the recipe very simple so if your craving for a cozy Indian meal do cook this recipe for yourself and your loved ones.

Ingredients

👉5 Potatoes medium chopped

👉A Pack of baby spinach(250 gms)/

OR A bunch of spinach

👉1 tbsp Oil

👉1 tsp Cumin Seeds

👉3 slited Green Chillies

👉2 medium finely chopped Onions

👉1 tbsp Ginger Garlic paste

👉Salt to taste

👉1/2 tsp Turmeric Powder

👉2 Tomatoes finely chopped

👉1/2 tsp red Chilli Powder

👉1 tbsp coriander powder

👉1/2 tsp Chaat masala


Method:

👉Wash the potatoes nice and clean. Peel off the skin and chop them into equal sized pieces.

👉Put them in a bowl of water and keep them aside.


👉Take a wide pan and put oil in it. Add cumin seeds, green chillies and saute.

👉Add in the chopped onions and saute until they are transparent.

👉Then add ginger garlic paste saute along with onions.

👉Add chopped potatoes and mix well. Add in salt, turmeric powder and mix it all again.

👉Add tomatoes and mix. Add in chilli powder, coriander powder and chaat masala

👉Mix to make sure they coat the potatoes well and add water. Mix it all again.

👉Cover the pan and cook the potatoes for 10 mins.

👉Once the potatoes are nice and soft, add in the cleaned and chopped palak leaves.(I have used here baby spinach packet which doesn’t require chopping just add the whole pack)

👉Mix them well with potatoes and close the pan to cook for 3-4 mins.

Mix well and transfer it into a serving bowl. And it’s ready to serve

👉Serve the aloo palak sabzi hot with phulka,naan, roti, rice or bread
